Buy tickets for the museum or any exhibits that require additional fees. Take your time and enjoy the day.

On the way back, you may choose to take a stroll beside the Yarra River and find some dining options at the nearby Southgate shopping mall.
You may go back to your hotel to freshen up and rest a little before heading out to dinner.

Just important to note that on most days, kitchens have a closing time (earlier than the actual restaurant closing time) so it is best to go to a restaurant for dinner by 7PM at the latest so you have enough time to order before the kitchens close.
